The difference between ordinary roast potatoes and exceptional ones is not simply more oil or a hotter oven. The exterior needs to be changed before roasting. Parboiling hydrates the starch, a small amount of baking soda softens the outer cell structure, and vigorous tossing creates a rough paste that dries into a brittle crust.

The result is a potato with two distinct textures: a deeply crisp shell and a soft, steamy center.

Ingredients

  • 4 pounds russet or Yukon Gold potatoes, or a mixture
  • 2 tablespoons kosher salt for the water
  • 1/2 teaspoon baking soda
  • 5 tablespoons olive oil, duck fat, or beef drippings
  • 4 garlic cloves, lightly crushed
  • 2 rosemary sprigs or a small handful of thyme
  • Fresh black pepper
  • Flaky salt for finishing

Method

  1. Heat the oven to 450°F with a large heavy sheet pan inside.
  2. Peel the potatoes if desired and cut them into large 2- to 3-inch chunks.
  3. Bring a large pot of water to a boil. Add kosher salt and baking soda.
  4. Add potatoes and return to a simmer. Cook until the outside is tender and a knife meets slight resistance at the center, about 8 to 12 minutes depending on size.
  5. Meanwhile, warm the fat with garlic and herbs over low heat for five minutes. Strain, reserving the crisp garlic and herbs for later.
  6. Drain the potatoes thoroughly and let them steam-dry in the pot for two minutes.
  7. Add the infused fat, season with pepper, cover the pot, and shake firmly. The potato surfaces should become rough and coated with a thin layer of mash.
  8. Carefully remove the hot sheet pan. Spread the potatoes in one layer with space between them.
  9. Roast for 25 minutes without moving.
  10. Turn the potatoes and continue roasting for 25 to 40 minutes, turning once more if needed, until deeply brown and crisp.
  11. Toss with the reserved garlic and herbs, add flaky salt, and serve immediately.

Why baking soda makes potatoes crispier

Potato cell walls contain pectin. Alkaline cooking water weakens that structure at the surface. The outer layer softens and releases more starch, which becomes visible when the potatoes are tossed after draining.

That rough coating increases surface area. In the oven, water evaporates and the starch sets into a crisp shell. The technique is widely used in high-crisp roast potato recipes and is also recommended by Potatoes USA.

Use a small amount of baking soda. Too much can make the potatoes taste soapy and cause them to fall apart before roasting.

Russet versus Yukon Gold

Russets create the fluffiest center and the roughest, crispiest surface. They are also more fragile after boiling.

A half-and-half mixture gives variety on the same tray. Cut the pieces to similar size so they finish together.

Why the potatoes should be large

Lemon and oregano

Use olive oil, dried oregano, and lemon zest. Add lemon juice only after roasting so the crust stays crisp.

Parmesan and black pepper
